When I was little we used to get “chippers” at the bakery in the Sun Valley Mall. That bakery is no longer there, but it’s ok homemade is always better. They are bite size, crispy on the outside and soft in the middle, and oozy with chocolate. We tried many recipes to try to match what I had remembered from when I was nine. And this is THE ONE. My husband even makes them for me when I’m sick, so they’re easy!

Start like all basic cookies. Cream the butter and sugars.

1 cup butter
1 cup brown sugar
1/2 cup sugar

Once the mix is creamed, add the egg and vanilla.

2 eggs
2 teaspoons vanilla

Finally add the dry ingredients until fully mixed.

1 1/4 cups flour
1/2 teaspoon baking soda

Last is the best part, mix in the oats and chocolate chips. You could also mix in other fruity/nutty foods here, but I just like chocolate.

3 cups oats
1 – 2 cups chocolate chips

Preheat the oven to 325, and put teaspoon sized chunks of dough onto the cookie sheet.

Bake for about 10 minutes, just until they start to get golden along the bottoms.

Let them cool slightly before eating.
