Tonight was Guys Movie night at our house. My husband and 8 of his friends all huddled around the TV watching Thor at max volume consuming lots of junk food. I wanted to make a concession stand for them just like at the move theaters - with fresh popped popcorn, lots of candy, mini ice creams and nachos with HOMEMADE nacho cheese sauce.
I had the first couple guests that arrived rearrange the couches for the optimal movie viewing. Meanwhile I got to work on the nachos.
Pre-grate about 2/3s of a loaf of cheddar cheese. That’s about 4+ cups.

In a large sauce pan on medium heat melt the butter. Once melted sprinkle the flour and stir constantly.

| 1/4 cup | flour |
Continue stirring for about 3 minutes or until the mixture starts to golden.
Now slowly stir in warm milk. Emphasis on SLOWLY because if you go too fast it will get lumpy and that’s just no good. Patiently add the milk about 1/4 cup at a time until you reach a smooth thick consistency.

Once the mixture is nice and bubbly add the seasoning. These measurements are approximate, add as much or as little as you’d like.
| 1/2 teaspoon | salt |
| 1/2 teaspoon | pepper |
| 1/2 teaspoon | nutmeg |
| 1/2 teaspoon | chili powder |
Now it’s time to add the cheese. Slowly sprinkle in a small handful at a time, constantly stir.
Finally it’s time to add the cream to give it a nice smooth texture. Otherwise it gets grainy from all the cheese. Stir until combined.

Drizzle over tortilla chips. For movie night I kept it warm in a fondue pot, but you could also keep it on the stove on low heat.
